Phenomenon · pH-triggered

Blue, until the tonic hits.

Our Blue Bvjalie Gin steeps in blue butterfly pea flower — Clitoria ternatea — for seventy-two hours, then is refined with pure Barossa Valley rainwater. Add tonic, lemon or lime — anything of low pH — and it turns from deep ocean blue to blossom pink, right there in the glass.

The still-house · four units

Tinny, Lucy, Katrina & big Bertha.

Four stills in the heart of the Barossa, each with her own temperament: Tinny the 50-litre test pilot, Lucy the hard-working beauty, Katrina the full-copper purist — and Bertha, our new 3,000-litre arrival, exactly as big as she sounds.
